Granola

Lisa writes: After looking at our collectively weird dietary restrictions (oat-laden, ketchup- and refined sugar-free) you may be thinking, "What do these people eat?" Silly question! We eat what all non-television-watching-Commie-pinkos eat: Granola! And we make it ourselves! You can too:

6 cups Quaker oats (not quick-cook)
1 cup maple syrup (the real stuff, not Mrs. Butterworth)
4-6 cups nuts/seeds (almonds, walnuts, peanuts, sesame, sunflower, etc)
1 heaping teaspoon of cinnamon

You could add a cup of shredded coconut at this point, but you wouldn't do that. It gets all stuck in your teeth and stuff. (And my dad insists it causes cancer.*)

That's the basics. We also add:
5 more teaspoons of cinnamon
1/2 teaspoon nutmet, cloves, allspice, pumpkin pie spice, and anything else that sounds good
2 teaspoons vanilla or almond flavor

Mix it all up in a big bowl and spread it out into the biggest cake pan or turkey roasting pan you've got. Bake for 10 minutes at 350. Stir. Bake another 10 minutes. Stir. Maybe toss it back in for another 5 minutes if you like it really crunchy.

Add 1 cup raisins or dried apples, dried sweetened cranberries, dried cherries, dried blueberries, banana chips. You get the idea.

Let it cool and scoop it into baggies. No refrigeration required.

This makes loose granola -- it doesn't all stuck together. Do not let the kids eat this in the car! Let the kids take it to school. Put it over yogurt. Pour soy milk over it and eat it as cereal. De-hippify it a little bit by eating it over vanilla ice cream.

*Note: Coconut does not cause cancer. Dad just says that because it's the only way he can get people to stop trying to make him eat it. The same is not true for ketchup. Ketchup really does cause cancer.
