Recipe: Pork chops and apples

Lisa writes: To all the Costco fans on earth! Grab your monthly coupon thingy and get thee to the meat section, stat! There's a big ol' sale on boneless pork chops, and if you buy a pallet or two, you can make a ton of very excellent pork chops & apples for, like, very close to no money. Maybe $10. For a whole bunch. Your praises will be sung loudly.

I sort of used this recipe, but it actually turned out like this:

INGREDIENTS

However many pork chops will fit in your baking pan
Olive oil
Salt & pepper
3 green apples, cored, peeled, and cut into 1/2" slices
3 Tablespoons brown sugar (optional)
1/4 tsp thyme, if ya got it around
1/4 ground cloves
1/4 tsp cinnamon
1/2 lemon's-worth of juice, or 3 Tablespoons, if ya got it

INSTRUCTIONS

Meat: Brine nothing because you just decided to cook this a minute ago and brining takes 2 hours and you don't have half the ingredients anyway. Turn oven on 350. On the stovetop, get a big skillet really hot and pour the olive oil on it. Salt and pepper the chops and put them on the skillet for 4 minutes each side. (Might have to do it in batches.) Put all the browned chops into a baking pan and put into oven for 30 minutes until meat thermometer shows 140 degrees in center. (This is pork. I'm a little bit carefuller than usual with pork.)

Apples: Clean and dry the skillet. Heat up a couple of tablespoons of olive oil. Melt the butter on medium heat. Throw in the apples, cover and let sit for about 5 minutes. Pour in sugar, thyme, cloves, cinnamon, and 1/4 cup of water. You might not really need the sugar. Stir around a bit and put the lid back on for another 5 minutes. If you used really tart apples, you don't need the lemon juice. If you used bland apples, put the lemon juice in there at the end of 5 minutes. WARNING: If you overcook this, it will turn into apple sauce. Still tasty, mind you, but a very different presentation.

By now, the meat is done. Take it out, dump the apples and their juices on top. Ta-dah! You are a genius! If you live with Tom, he's going to eat all the apples and only half of one small piece of meat at a sitting, so you can just keep making more apples and serving this up over and over again!

Yum! I make something similar but add yams to the mix and cook it in a crockpot. It is tasty. Just reading your post made my mouth start to water!
